Fresh Strawberry and Chocolate Chip Muffins

 

Hi guys!
I wanted to make a snack this afternoon, but wanted to keep it relatively light. Something sweet, but not loaded with unnecessary calories. I settled on these muffins. Theres no butter, no oil, and minimal sugar! They get most of their sweetness from the strawberries and chocolate chips. Also, this recipe makes about 10 muffins, which is much better then 24. Im always running out of people to give food to.

Ingredients are also pretty minimal.

1 1/4 cup flour

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

14 cup granulated sugar

1/4 cup packed brown sugar

1/2 cup + 2 tablespoons unsweetened applesauce

1 egg white, beaten

2/3 cup diced strawberries

1/3 chocolate chips

 

Preheat the oven to 350.
First, chop the strawberries and set aside. Toss together the flour, baking soda, and cinnamon. In a second bowl, beat together the sugar, brown sugar, and apple sauce. Add your beaten egg white to the sugar mixture until combined. Gradually add the dry ingediants into the sugar/egg mixture until fully incorporated, but don’t over-mix. Gently fold in the strawberries and chocolate chips. Grease your muffin pain, and evenly distribute into 10 cups. Bake for about 16 minutes. A toothpick should come out clean and they’ll be very springy on top. Let cool in the muffin pan for just a minute, but they should be firm enough to pop right out.
